Sorry to be pedantic, but It's not pinched harmonics at all.
It's the same kind of harmonics as when you hold your finger lightly on the string on the 5th, 7th 12th fret etc, except you can also do it by "whipping" the string on those frets with one finger (kind of like a hard hammer-on that you release very quickly), you can do it with either hand so you can incorporate it in with tapping etc.
