INGREDIENTS:
This recipe makes 4 Roti's:
1/2 Cup Whole wheat flour
Pinch of Salt
1/4 Cup and 1 tablespoon of luke warm water
1/4 teaspoon of Oil
1 teaspoon of Ghee or clear butter

Hello Auntiji, I tried making chapati. i could get a few to puff up, but the chapati didnt feel so soft and thin. i am guessing it has to do with the chapatoi flour which is used. PLease tell me, which chapati flour do you like the best in US?? i will try to get that one, if we have it in the indian stores around in the bay area. Thank you very much, in advance :-)

Hello Shri, I use Sujata or gilden temple. The number one reason why rotis become hard is because after each individual roti is made, they should be covered immediately so the steam keeps the rotis soft. The second reason your rotis may become dry and not puff is because the dough is not kneaded enough.

Thank You very much for your prompt reply Auntiji, but i have used both golden temple ata (Durum ata) and Sujata ata and didnt have much success.. i also kept the kneaded dough for half an hour standing time before actually cooking rotis! I will definitely try to knead it more this time; maybe i am making that mistake :-) Thanks once again Auntiji!!! God Bless..

Also Auntiji, i had one more question.. in your video you have mentioned that you use an iron skillet for making rotis. Please can you tell me if they really make a lot of difference compared to a typical non-stick skillet used for dosa's etc? I will love to buy a new iron skillet, if you advise me so & if according to you they make a very pleasant difference than the non-stick one :-)

Many of us wait until all rotis are made and then cover them. The second reason your rotis may become hard is because the dough hard or it is not kneaded enough or you are roasting for too lohg.
