I think it was because the weapons the completed eva had were actually multiples of the Lance of Longinus in disguise, which they were to use on Adam like how one was used on Lilith. Or something...?

The Mass Produced Evas all had copies of the original lance. They weren't as powerful, but they were still able to penetrate Asuka's AT-Field and pierce Unit-02's head :(
