They never confirmed if Aerith was "over" her love for Zack. According to Crisis Core, Aerith downplayed her relationship with Zack a lot in FF7. If she was SO over him, why didn't she stop wearing his ribbon and cast aside the idea of wearing pink to surprise him when he came back if she didn't love him? The things that happen in Crisis Core explain so much and help you understand Aerith's attitude much better.
