I read on another video of this same performance that he had some kind of nerve damage or problem like that going on with his hand during this time and was unable to play his guitar. He probably thought he might be able to so took the guitar with him but then was unable to or he just wore it anyway because he is used to doing that. Alison Krauss does the same with her fiddle sometimes and I have seen other guitar players do it as well. They probably just hold them out of habit.

I've seen him in concert, he does play the guitar, but not on all songs. George openly admits that he has stagefright. Having the guitar provides a buffer between him and the crowd. It relaxes him.
